I think watercolors are the most "forgiving" of paints and the variations in color and tone are all part of what makes watercolors so pretty. ^^
For skin tones, I often use warm tones like oranges, reds, and yellows and mix them with a lot of water, The color on the palette may look super dark and orangey, but when watered down and applied to the paper (and sponged away the excess with a paper towel...), you can get a really nice, light peachy skin tone. Around the eyes, I add a little more red. For shadows, I add a very tiny touch of blue to dull the color.
Always make sure that your brush is loaded with water and paper is damp, otherwise you get streaks everywhere. X_X;
